Merlot
Havens Merlot is a classic Bordeaux-styled wine with elegance and
complexity from nose to palate that lingers with full fruit and earthy
essence. Our Merlot wines bring out the best in those foods that
require little accompaniment other than the wine itself, such as stewed
meats with winter vegetables, pasta with powerful herbs, or risottos
combined with mushrooms or flavorful vegetables.
Recipes:
Syrah
Havens Syrah graces foods rather than dominates them, unlike the
warm-climate version of the same grape, sometimes called shiraz, which
can offer an oaky, high-acid, stewed quality of Grenache or port. With
its high-toned spice and supple texture, Havens syrah is also one of
the few wines whose best qualities appear with foods that have strong
flavors and aromas, such as lamb and game, as well as foods highly
seasoned with hot spice, pepper, or tangy sauces.
Recipes:
Albariño
Our Albarino’s refreshing floral aromas and exotic fruit refines the
sumptuous seafood experience: Raw oysters, sushi, simple scallops, and
rich lobster love its tartness and acidity. At the same time, the stone
fruit on the nose pairs Albarino perfectly with cheeses and fruits,
such as mangoes, figs, strawberries and pears preferably on the patio
or in the garden on a summer day.
Recipes:
Bourriquot
Our Bourriquot should first be tasted on its own; it romances the
palate with lingering refined fruit and spice. With a higher percentage
of Cabernet Franc than Merlot in this blend, you’ll then want to marry
its elegant, velvety sweetness with grilled and roasted meats to
compliment those caramelized fats and juices. Bourriquot also loves
savory seasoned stews and rich sauces, such as a Bordelaise. Speaking
of romance, though, Bourriquot loves a pairing with chocolate. . . and
so will you!
